Peruvian Amazon Food: Carachama broth
The carachama broth or carachama soup is a typical food of
the Amazonian communities in the department of Loreto, in Peru.
The carachama is a fish with 16 different species that lives
in fresh water. These types of carachama can be found in rivers with large
stones, since they occur in those areas, other specimens of carachama such as
the shiyu live in rocks and their reproduction is by making holes in those
types of places.
The traditional preparation of carachama broth is in clay
pots (kallana). Kallana is made by women from Amazonian communities with a special
clay called manga allpa. To make it, the fish is boiled in salty water. The
cooked carachama is accompanied with chili, yucca and cooked banana.
Ingredients
1 kg of carachama
2 liters of water
2 chili peppers
2 cloves of garlic
Cilantro
Salt to taste
Preparation
1. We wash the carachama and chop it in
half, then we put everything in a pot and boil it in a pot for 20 minutes.
2. Followed by this, add the garlic,
coriander, and chili peppers and cook for 10 more minutes.
3. Once ready, add chopped cilantro on
top.
4. Serve hot.
Carachama can also be found in other typical dishes such as:
Sweaty carachama: The sudado consists of a dressing of garlic, onion, coriander, tomato and yellow pepper, where fish is cooked. Depending on the area where it is prepared, chicha de jora or wine or pisco is usually added. It is served with cooked yucca.

Hi, my name is Trevery Cabanillas and I'm going to talk my eating
habits like my breakfast, lunch and dinner.
the breakfast is the most importand meal of the day because
it's the first and also It improves your energy levels and ability to
concentrate in the short term, and can help with better weight management and
reduced sickness risks.
for breakfast, i usally have, ham or fried eggs to acoompany
the bread.
for drink i prefer a cup of te or coffe and then i eat a
fruit.
Two in the afternoon I meet my family for lunch, we mostly
eat roast chicken with rice and salad, also some fresh drink to accompany it.
I usually eat all kinds of foods, I really like chicken with
mushrooms, but there are foods that I don't like, such as red talarines.
In the afternoon I like to eat desserts or an aperitif.
At dinner I usually eat a hamburger, my dinner schedule
depends on my classes at the university, since most of the courses I take at
night.
